Preparation
In a mixing bowl, combine 200g gram flour, 1/2 tsp salt, and 1/4 tsp baking soda. Gradually add 1/4 cup lukewarm water and knead into a smooth dough.

Cover the dough and let it rest for 10 minutes. Divide the dough into small portions and roll each portion into a cylindrical shape.

Boil 2-3 cups of water in a large pot. Once boiling, add the rolled gatte and cook for 10-12 minutes or until they float to the surface. Drain and set aside.

Heat 2 tbsp ghee or oil in a pan over medium heat. Add 1 tsp cumin seeds and let them sizzle.

Add 1 tsp coriander powder, 1/2 tsp turmeric powder, and 1/2 tsp red chili powder. Sauté for 1 minute.

Pour in 1/2 cup curd and stir continuously to avoid lumps. Cook for 2-3 minutes.

Add the cooked gatte to the gravy and simmer for 5-7 minutes to allow the flavors to meld.
