In a bowl, mix cauliflower and peppers. Set aside.

Heat oil in a heavy nonstick skillet over medium-high heat. Be cautious as the oil may splatter.

Add asafetida and cumin seeds, and cook for a few seconds until seeds are golden brown. Stir constantly to prevent burning.

Add onion and fry for 1 to 2 minutes until transparent. Stir occasionally to ensure even cooking.

Stir in ginger. Cook for a brief moment until the aroma is released.

Add the mixed vegetables and stir. Sprinkle with turmeric, salt, coriander, and cayenne pepper. Stir in a lifting and turning motion for 2 to 3 minutes, coating the vegetables with the spices.
