This flavorful and nutritious recipe consists of a rich, spicy vegetable curry served with a soft, buttered bread roll, and is a staple food in Maharashtra. The traditional version of Pav Bhaji often uses a mix of vegetables, but can be high in calories and refined carbohydrates. In my version, I've optimized the ingredients to make it a healthier and wholesome option, using a variety of vegetables, minimal oil, and whole wheat bread rolls. This dish is perfect for a quick and satisfying meal, and can be easily customized to suit different dietary preferences.
Heat 1 tablespoon of ghee or oil in a large pan over medium heat.
Add the chopped onions and sauté until they are translucent.
Add the chopped tomatoes and sauté for another 2-3 minutes.
Add the grated carrot and diced potato, and sauté for 5 minutes.
Add the mixed vegetables, cumin powder, coriander powder, turmeric powder, and red chilli powder. Mix well.
Add 2 cups of water to the pan and bring to a boil.
Reduce the heat to low and let it simmer for 10-15 minutes or until the vegetables are cooked.
Mash the vegetables with a potato masher or a fork to create a thick, chunky curry.
Season with salt to taste.
Meanwhile, slice the bread rolls and toast them lightly.
Butter the toasted bread rolls.
Serve the hot bhaji with the buttered bread rolls.
Garnish with fresh cilantro.
