A burst of smoky, fiery Rajasthani chutney that awakens the senses with toasted red chilies, garlic, sesame and a dhungri (smoked) tadka. The aroma of blooming spices in hot ghee, the crackle of mustard seeds and the deep char from the charcoal infusion create a rustic desert flavor that enhancing any flatbread or rice. Commercial chutneys often hide artificial colors, excess refined oil and preservatives; this chef‑crafted version uses cold‑pressed mustard oil, pure A2 ghee, whole spices and fresh herbs, delivering authentic heat without any synthetic shortcuts. Gather all spices, herbs and equipment. Place a small metal bowl or tawa ready for the dhungri tadka over medium flame (madhyam aanch).
Rinse coriander and mint leaves, pat dry, and set aside.
Heat a heavy‑bottomed pan over medium flame (Madhyam Aanch). Add the red chili pods, sesame seeds, cumin, fennel and peppercorns; roast 3–4 minutes, stirring constantly, until they turn deep mahogany and emit a nutty fragrance.

Let the chutney rest for 5 minutes at room temperature; this allows the flavors to meld and the smoke to settle.
