Before you start
Use fresh, firm fish such as kingfish or pomfret; small fillets work best. Avoid oily or flaky fish that may break apart during cooking.
Fresh coconut milk can be made by grating mature coconut flesh and squeezing the pulp. Store‑bought coconut milk should be thick, unsweetened, and free of additives.
The curry can be cooked a few hours earlier; the flavors meld, but it is best served fresh. Keep it warm over low heat to preserve the aroma.
A blend of cumin, coriander, black pepper, a touch of fennel seeds, and fresh curry leaves creates the mellow, aromatic profile typical of Kerala coastal kitchens.
Reduce or increase the number of green chilies; you can also temper the curry leaves lightly to soften heat.
