Namaste, I'm Chef Rajnish Saharan, and I'm delighted to share with you my expertise in crafting a delicious and nutritious Onion Bhaji recipe. This popular Indian street food is often associated with unhealthy ingredients, but my version transforms it into a wholesome, nutrient-dense treat. Traditional Onion Bhaji recipes often use refined flour, excessive oil, and unhealthy fats. In my optimized version, I've replaced refined flour with whole grain besan (gram flour), reduced oil usage, and added fresh herbs for extra flavor and nutrition. This recipe is perfect for a quick, satisfying snack or as a side dish for your favorite Indian meals.

Main Ingredients

500g small onions, finely chopped
2 green chilies, finely chopped
3 tomatoes, finely chopped
1 inch ginger, grated
2 tbsp oil
1/3 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chili powder (Kashmiri)
1 tsp besan (gram flour)
salt, to taste
3 tbsp yogurt (dahi)

Cooking Method

Preparation

Finely chop the onions, green chilies, and tomatoes. Grate the ginger.

In a large mixing bowl, combine the chopped onions, green chilies, tomatoes, and grated ginger.

Add the besan, turmeric powder, red chili powder, and salt to the bowl. Mix well.

Tempering and Mixing

Heat 1 tablespoon of oil in a small pan over medium heat. Add the mustard seeds and cumin seeds. Let them sizzle for a few seconds.

Add the tempered spice mixture to the bowl with the onion mixture. Mix well.

Add the yogurt to the bowl and mix until the mixture is well combined.

Shaping and Frying

Using your hands, shape the mixture into small, round bhajis.

Heat the remaining 1 tablespoon of oil in a deep frying pan over medium heat. When the oil is hot, add a few bhajis to the pan (do not overcrowd).

Fry the bhajis until they are golden brown and crispy, about 2-3 minutes on each side. Drain on paper towels.
