10-12 Cashew Nuts / Kaju (काजू), soaked in warm water for 20 minutes
2 tbsp Pure Desi Cow Ghee / Ghee (शुद्ध देसी घी)
1/2 cup Fresh Cream / Malai (दूध की मलाई) [Optional for extra richness]

Whole Spices & Tempering (Tadka)

1 tsp Cumin Seeds / Jeera (जीरा)
2 Green Cardamoms / Elaichi (हरी इलायची), crushed
1 inch Cinnamon Stick / Dalchini (दालचीनी)

1/2 tsp Turmeric Powder / Haldi (हल्दी)
1 tsp Kashmiri Red Chilli Powder / Lal Mirch (कश्मीरी लाल मिर्च)
1 tsp Coriander Powder / Dhaniya (धनिया पाउडर)
1/2 tsp Garam Masala (गरम मसाला), freshly ground
1 tsp Rock Salt / Sendha Namak (सेंधा नमक), to taste
1 tsp Ghee for tempering (टिपकाया घी)

Cooking Method

Phase 1: Preparation & Setup

Wash the fresh spinach leaves thoroughly in three changes of water to remove any grit or sand. Drain well and chop them coarsely (about 1-inch pieces). Do not blend the spinach; chopping preserves the texture and prevents the gravy from becoming mushy.

Soak 10-12 cashew nuts in warm water for 20 minutes. Once softened, drain them and blend with 2 tablespoons of water into a silky, smooth paste. Set this 'Malai' paste aside.

Prepare the aromatics: Finely chop 2 medium onions, grate 1 inch of ginger, and mince 3-4 garlic cloves. Puree 2 medium tomatoes until smooth. Ensure all ingredients are measured and ready at your station before heating the pan.

Phase 2: Sautéing & Base Masala

Heat 2 tablespoons of pure desi cow ghee in a heavy-bottomed kadai or deep pan over medium flame (madhyam aanch). Once the ghee is hot and shimmering, add cumin seeds, crushed green cardamoms, and the cinnamon stick. Let them splutter for 15-20 seconds until the nutty aroma blooms.

Add the finely chopped onions to the tempered ghee. Sauté on medium flame for 5-6 minutes, stirring frequently. The onions should turn translucent with golden-brown edges, not blackened. This caramelization is crucial for the sweet depth of the masala.

Stir in the grated ginger and minced garlic. Cook for 1 minute until the raw pungency disappears and the aroma becomes sweet and fragrant. Add the tomato puree, turmeric powder, Kashmiri red chilli powder, coriander powder, and rock salt.

Sauté (bhunao) the masala on medium-low flame for 6-8 minutes. Stir continuously to prevent sticking. The goal is to cook out the moisture from the tomatoes until the ghee separates from the edges of the pan (rogān release). The masala should look dark red-brown and glossy.

Phase 3: Simmering & Green Integration

Reduce the flame to low (dheemi aanch). Stir in the cooked spinach. Allow the leaves to wilt down for 2 minutes. You do not need to add water yet; the moisture from the spinach and the tomato masala is sufficient to create a base gravy.
