¼ cup mustard oil

For Cooking

1 ½ tbsp remaining mustard oil
1 tbsp mustard oil
A pinch of hing
7–8 dry fenugreek seeds
½ tsp cumin seeds
½ tsp fennel seeds
1 ½ cup whisked plain yogurt
1 tbsp ginger‑green chilli paste
1 inch ginger, peeled and finely chopped
2 green chilies, finely chopped
2 tbsp butter (cube)

Garnish

1‑2 tbsp fresh coriander leaves, finely chopped

Cooking Method

Marination

Wash the bitter gourds under running water, peel the skin with a vegetable peeler, and cut each gourd lengthwise into four equal quarters, discarding the tough central ribs if desired.

Sprinkle 1 tsp salt evenly over the cut pieces, toss gently, and set aside in a bowl for 15 minutes to draw out excess bitterness.
