2 medium onions, chopped
2 medium tomatoes, chopped
1 medium carrot, peeled and grated
1 medium potato, peeled and diced

1/2 tsp red chilli powder
Salt, to taste
2 cups water
Fresh cilantro, for garnish

For the Pav (Bread Roll)

4 whole wheat bread rolls
2 tbsp butter or margarine

Cooking Method

Preparation

Heat 1 tablespoon of ghee or oil in a large pan over medium heat.

Add the chopped onions and sauté until they are translucent.

Add the chopped tomatoes and sauté for another 2-3 minutes.

Add the grated carrot and diced potato, and sauté for 5 minutes.

Add the mixed vegetables, cumin powder, coriander powder, turmeric powder, and red chilli powder. Mix well.

Cooking

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and let it simmer for 10-15 minutes or until the vegetables are cooked.

Mash the vegetables with a potato masher or a fork to create a thick, chunky curry.

Season with salt to taste.

Meanwhile, slice the bread rolls and toast them lightly.

Butter the toasted bread rolls.

Assembly and Serving

Serve the hot bhaji with the buttered bread rolls.
