Imagine the kitchen awash with the warm perfume of caramelised jaggery, toasted chana dal, and a whisper of cardamom[1][2], while a thin, golden‑brown whole‑wheat sheet glistens with molten ghee. This Puran Poli delivers that exact moment: a silky, melt‑in‑the‑mouth sweet stuffing encased in a feather‑light, slightly crisp roti that crackles softly as you lift it. Many commercial stalls shortcut this heritage by frying in refined palm oil, adding artificial orange colour and a dash of MSG to fake depth. Those shortcuts strip away the natural nuttiness of dal and the buttery richness of pure desi ghee[1][2], leaving a greasy, artificial aftertaste. Our Mabapu‑crafted version shuns all shortcuts, using whole‑grain wheat flour, stone‑ground chana dal, unrefined jaggery, and 100 % pure Desi cow ghee, delivering a wholesome, aromatic, and nutritionally superior treat that honors the true spirit of Maharashtrian festivals.

Ingredients

Adjust Servings: 4

Core Sweet Filling (भराव)

250 g Chana Dal / चणा डाळ
150 g Jaggery (गुड़), grated
1 tsp Cardamom Powder / इलायची पाउडर (इलायची)
¼ tsp Nutmeg Powder / जायफल पाउडर (जायफल)
2 tbsp Pure Desi Cow Ghee (शुद्ध देसी घी)
¼ tsp Salt (नमक) – optional, to balance sweetness
1 tsp Roasted Fennel Seeds (सौंफ़) – Mabapu twist

Dough & Cooking Medium

250 g Whole Wheat Flour (गेहूँ का आटा)
2 tbsp Pure Desi Cow Ghee (शुद्ध देसी घी) – for dough
½ tsp Baking Soda (बेकिंग सोडा)
¼ tsp Turmeric Powder (हल्दी) – for colour
¼ tsp Salt (नमक)
180 ml Warm Water (गुनगुना पानी)
Extra Pure Desi Cow Ghee (शुद्ध देसी घी) – for pan‑roasting

Cooking Method

Phase 1: Preparation & Setup

Rinse the Chana Dal thoroughly and soak it in water for 2 hours. Drain and set aside. (Medium Flame / Madhyam Aanch – no flame yet, just soaking).

In a heavy‑bottomed pan, add 1 tbsp ghee and heat on High Flame / Tez Aanch. When the ghee shimmers, add the soaked dal. Sauté for 2‑3 minutes until a faint nutty aroma blooms, stirring continuously (visual cue: dal turns slightly glossy).

Add 300 ml fresh water, a pinch of salt, and bring to a rolling boil. Reduce to Low Flame / Dheemi Aanch, cover, and simmer for 20‑25 minutes until the dal is fork‑tender but still holds its shape (sensory cue: soft yet not mushy, occasional gentle splutter).

While the dal cooks, grate the jaggery into a bowl. In a separate small saucepan, melt 1 tbsp ghee on Medium Flame / Madhyam Aanch, add the grated jaggery and stir until it dissolves into a smooth syrup (visual cue: syrup turns deep amber, aromatic cue: sweet caramel scent fills the kitchen).

Once the dal is cooked, drain any excess water, mash it lightly with a wooden spoon, then stir in the hot jaggery syrup, cardamom[1][2] powder, nutmeg, roasted fennel seeds, and the remaining 1 tbsp ghee. Cook on Low Flame / Dheemi Aanch for another 5 minutes, stirring constantly until the mixture thickens, pulls away from the pan, and a glossy sheen appears (visual cue: mixture forms a single, cohesive mass). Set the filling aside to cool.

For the dough, combine whole wheat flour, turmeric, baking soda, and salt in a large bowl. Add 2 tbsp ghee and rub it into the flour until the mixture resembles coarse crumbs (visual cue: specks of ghee visible). Gradually pour warm water while kneading to form a smooth, non‑sticky dough. Cover with a damp cloth and let rest for 30 minutes – this relaxes gluten and yields a tender roti (chef secret: chilling the dough for 15 minutes after resting improves elasticity).

Phase 2: Sautéing & Tempering

Heat a clean skillet on Medium Flame / Madhyam Aanch and add 1 tbsp ghee. When the ghee foams and the aroma of toasted ghee spreads, it signals the pan is ready for rolling (sensory cue: faint crackling).

Phase 3: Simmering & Shaping

Divide the rested dough into 4 equal balls (≈80 g each). Flatten each ball between your palms, then dust with dry flour and roll into a 12‑cm circle, about 2 mm thick (visual cue: translucent edges, no tears).

Place a generous spoonful (≈60 g) of the cooled filling in the centre of the rolled dough. Bring the edges together, pinch to seal, and gently flatten the sealed ball. Dust lightly and roll again into a 15‑cm thin roti, ensuring the filling remains intact (visual cue: even, smooth surface).

Slide the rolled Puran Poli onto the hot skillet. Cook on High Flame / Tez Aanch for 30 seconds until tiny bubbles appear, then flip. Drizzle ½ tbsp ghee around the edges, press gently with a spatula, and cook another 30 seconds (visual cue: golden‑amber spots, aromatic cue: nutty ghee fragrance). Flip once more, add another drizzle of ghee, and cook until both sides are evenly browned with a glossy finish (sensory cue: crisp edges, soft centre).

Phase 4: Finishing & Serving

Transfer the cooked Polies to a serving plate, brush each with a thin layer of warm ghee for extra sheen (chef secret: finish with cold‑chilled ghee for a mirror‑like gloss). Let rest for 2 minutes before serving.

Serve hot with a dollop of fresh homemade butter, a side of cool cucumber‑mint raita, and optionally a spoonful of sweetened condensed milk or shrikhand for an indulgent finish.

Frequently Asked Questions

How long should the dough rest before rolling?

Let the dough sit covered for 30 minutes; after that, chill it for another 15 minutes to relax the gluten and make the roti softer.

Can I use white sugar instead of jaggery?

White sugar will give a milder sweetness and a different texture; jaggery adds caramel depth and a richer flavor that’s key to the authentic Maharashtrian taste.

What if I want a less sweet version?

Cut the jaggery in half or mix it with a pinch of salt to balance the sweetness while keeping the filling moist.
