Dough & Base Ingredients

3 cups Whole Wheat Flour / Atta (गेहूं का आटा)
1 tsp Rock Salt / Sendha Namak (सेंधा नमक)
Approx. 3/4 cup Water, for kneading (पानी)

Gravy & Tempering

1 cup Fresh Yogurt / Dahi (दही), whisked smooth
2 medium Ripe Red Tomatoes, pureed (टमाटर प्यूरी)
2 Green Chilies, finely chopped (हरी मिर्च)
1 tsp Cumin Seeds / Jeera (जीरा)
1/4 tsp Hing / Asafoetida (हींग)
2 tbsp Pure Desi Cow Ghee (शुद्ध देसी घी)

Ground Spices & Seasoning

1/2 tsp Turmeric Powder / Haldi (हल्दी)
1 tsp Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च)
1 tbsp Coriander Powder / Dhaniya Powder (धनिया पाउडर)
1/2 tsp Garam Masala (गरम मसाला)
1/2 tsp Rock Salt / Sendha Namak (सेंधा नमक), adjust to taste

Cooking Method

Phase 1: Preparation & Dough Setup

In a large mixing bowl, combine 3 cups of whole wheat flour and 1 teaspoon of rock salt. Gradually add about 3/4 cup of water while kneading. Continue kneading for 5-7 minutes until you achieve a smooth, soft dough with a texture similar to soft roti dough. It should not be sticky.

Cover the dough with a damp cloth or cling wrap and let it rest for 20-30 minutes. This resting period allows the gluten to relax, making the dough easier to roll out and preventing the chakki pieces from shrinking during boiling.

Phase 2: Shaping & Boiling the Chakki

Bring a large pot of water to a rolling boil on high flame (tez aanch). Once boiling, reduce the flame to medium-low to maintain a gentle simmer.

Take small portions of the rested dough and roll them into small, slightly thick lumps or small flat strips. Alternatively, you can cut small square pieces directly from the dough. Gently drop these dough pieces into the simmering water.

Boil the dough pieces for 3-4 minutes until they float to the surface and appear slightly puffed and opaque. This indicates they are cooked through. Use a slotted spoon to transfer them into a bowl of ice-cold water to stop the cooking process and firm up the texture.

Drain the ice water and cut the boiled dough pieces into small, bite-sized cubes (approximately 1-inch). They should look similar in shape to paneer cubes but have a denser, bread-like appearance.

Phase 3: Sautéing & Gravy Base

In a heavy-bottomed kadai or deep pan, heat 2 tablespoons of pure desi cow ghee over medium flame (madhyam aanch). Add 1 teaspoon of cumin seeds and let them splutter for 15-20 seconds until they turn dark brown and fragrant.

Add 1/4 teaspoon of hing (asafoetida) to the hot ghee. It will sizzle and release a pungent aroma. Add the chopped green chilies and sauté for 30 seconds until they soften and their oil separates.

Pour in the tomato puree, 1/2 teaspoon of turmeric powder, 1 teaspoon of Kashmiri red chilli powder, and 1 tablespoon of coriander powder. Stir well to combine.

Sauté (bhunao) the masala on medium-low flame for 6-8 minutes, stirring frequently. Cook until the moisture evaporates, the color deepens to a rich brick red, and droplets of glistening ghee separate from the edges of the pan (rogān release). This step eliminates the raw tomato taste.

Phase 4: Simmering & Combining

Carefully add the whisked yogurt to the hot gravy. Stir continuously and gently to prevent curdling. Cook for 2 minutes on low flame (dheemi aanch) until the yogurt thickens and integrates with the masala.

Add the boiled and cut chakki (wheat dough cubes) to the gravy. Gently fold them in to coat every piece with the masala. Add 1/2 to 3/4 cup of warm water, depending on your desired gravy consistency. Stir well to deglaze the bottom of the pan.

Bring the mixture to a gentle simmer on low flame. Cover the pan with a lid and let it cook for 5-7 minutes. The chakki pieces will absorb the liquid and become tender while maintaining their shape. The gravy should thicken to a sauce-like consistency that coats the back of a spoon.
