Fresh Vegetables & Aromatics

1 medium Onion, finely chopped (बारीक कटा प्याज)
2 medium Tomatoes, finely chopped (बारीक कटा टमाटर)
1/2 cup Green Beans, diced into 1cm pieces (कटरी)
1/2 cup Carrots, julienned (गाजर)
1/2 cup Cauliflower, small florets (फूलगोभी)
1 tbsp Ginger-Garlic Paste (अदरक-लहसुन पेस्ट)
2 Green Chilies, slit (हरी मिर्च)

Spices & Seasoning

1 tsp Cumin Seeds / Jeera (जीरा)
1/2 tsp Turmeric Powder / Haldi (हल्दी)
1 tbsp Coriander Powder / Dhaniya (धनिया पाउडर)
1 tbsp Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च)
1 tsp Garam Masala (गरम मसाला)
1 tsp Roasted Kasuri Methi, crushed (भुनी कसूरी मेथी)
1 tbsp Lemon Juice (नींबू का रस)
1/2 tsp Rock Salt / Sendha Namak (सेंधा नमक) or to taste

Finishing & Garnish

1/4 cup Fresh Coriander Leaves, chopped (धनिया पत्ते)
4-5 Curry Leaves, for tempering (करी पत्ते)
1/2 tbsp Roasted Peanuts or Cashews (भुने मूंगफली या काजू)

Cooking Method

Phase 1: Preparation & Setup

Wash and dice all vegetables: chop onions and tomatoes finely, dice green beans into 1cm pieces, julienne carrots, and break cauliflower into small florets. Ensure uniform sizes for even cooking.

Measure out all dry spices and keep them in small bowls. Crush the roasted kasuri methi between your palms to release its volatile oils.

Phase 2: Sautéing & Base Masala

Heat 1 tablespoon of mustard oil or ghee in a wide non-stick pan or kadai over medium flame (madhyam aanch). Add cumin seeds and let them splutter for 10-15 seconds until they turn dark gold and fragrant.

Add the chopped onions and sauté on medium flame for 3-4 minutes until they turn translucent and develop light golden amber borders. Stir frequently to prevent sticking.

Add the ginger-garlic paste and slit green chilies. Sauté for 1 minute until the raw pungency disappears and a nutty aroma emerges.

Add the chopped tomatoes, turmeric, coriander powder, and chilli powder. Sauté on medium-low flame for 4-5 minutes until the tomatoes mash into a thick paste and oil begins to separate (rogān release).

Phase 3: Vegetable Stir-Fry & Noodle Integration

Increase the flame to high (tez aanch). Add the diced green beans, julienned carrots, and cauliflower florets. Stir-fry vigorously for 2 minutes to ensure they retain a crisp-tender texture and vibrant color.

Add the aata noodles to the pan. Use a flat spatula or tongs to toss and separate the noodles, ensuring every strand is coated with the masala. Cook on high flame for 2 minutes, tossing continuously to prevent clumping.

Reduce the flame to low (dheemi aanch). Sprinkle garam masala and crushed kasuri methi over the noodles. Fold gently to distribute the spices evenly without breaking the noodle strands.

Phase 4: Finishing & Serving

Turn off the heat. Squeeze in the lemon juice and stir gently to refresh the flavor profile. Sprinkle with fresh coriander leaves and roasted peanuts/cashews for texture and crunch.
