2 Green Cardamom Pods (এলাচ)
1 tsp Turmeric Powder / Haldi (हल्दी / হলুদ)
1 tsp Red Chili Powder (लाल मिर्च पाउडर / লাল মরিচ গুঁড়া)
1 tsp Garam Masala (গরম মশলা)
1 tsp Ginger, finely grated (अदरक / আদা)
2 Green Chilies, slit (हरी मिर्च / কাঁচা মরিচ)
Salt to taste (नमक / লবণ)

Cooking Method

Once boiling, reduce flame to low, cover with a tight lid, and let simmer for 20‑22 minutes. Watch for the oil/ghee to separate and form a thin sheen on the surface – a key sign of doneness.

Stir in raisins and cashew halves; let them soften for another 2 minutes.

Phase 4: Finishing, Garnishing & Resting

Turn off the flame. Drizzle 1 tsp melted ghee over the khichuri, cover, and let rest off the heat for 3 minutes. This resting period allows the steam to finish cooking the grains to a fluffy texture.
