Experience the rustic charm of Punjab with these golden, flaky whole‑wheat parathas generously stuffed with spiced grated winter radish. Each bite offers a crisp exterior, a moist, aromatic interior, and a subtle heat from green chilies balanced by the earthy notes of carom and cumin. Served alongside a dollop of homemade white butter, this dish celebrates the simplicity of winter harvests while delivering wholesome nutrition. Compared to deep‑fried fast‑food breads, these parathas are cooked with minimal ghee, retain the natural fiber of whole wheat, and showcase authentic Punjabi flavors without any artificial additives.

Cooking Method

Phase 1: Preparation & Setup

In a mixing bowl, combine whole wheat flour, 1 tsp salt, and yogurt; add warm water gradually and knead into a smooth, non‑sticky dough. Cover with a damp cloth and let rest for 15 minutes on medium flame off.

While the dough rests, place grated radish in a clean kitchen towel, squeeze out excess moisture, then transfer to a bowl and mix with ginger, green chilies, cilantro, carom seeds, cumin seeds, red chili powder, turmeric, 1 tsp salt, and mustard oil. Set aside on low flame off.

Phase 2: Rolling & Stuffing

Divide the rested dough into 4 equal balls. On a lightly floured surface, roll each ball into a 10‑cm circle on medium flame off.

Place 2‑3 tbsp of the radish stuffing in the center of each circle, bring the edges together to seal, and gently roll again into a 15‑cm paratha, ensuring the stuffing is evenly spread, on medium flame off.

Phase 3: Cooking Paratha

Heat a tawa or flat skillet on medium flame. Add ½ tbsp ghee, swirl, and place the rolled paratha onto the hot surface; cook for 1‑2 minutes until light golden spots appear.

Flip the paratha, drizzle another ½ tbsp ghee around the edges, and press gently with a spatula. Cook on low flame for another 2‑3 minutes, flipping as needed, until both sides are crisp, flaky, and the radish stuffing is cooked through.

Phase 4: Making White Butter

In a small bowl, whisk the unsalted butter with a fork on low flame off until it turns pale and airy, resembling a soft white spread.

Optionally, add a pinch of salt for flavor; keep the white butter covered and set aside at room temperature.

Phase 5: Plating & Serving Suggestions

Stack the hot parathas on a warm serving plate, brush each with a thin layer of melted ghee, and place a generous dollop of white butter on top.

Serve immediately with a side of plain yogurt or pickled carrots for a complete Punjabi breakfast or snack.

Frequently Asked Questions

Chef-tested answers to the most common cooking, storage, substitution, and taste-enhancement questions for Crispy Amritsari Mooli Paratha with White Butter – Authentic Punjabi Winter Delight.

3 Expert Answers
01

How can I prevent the parathas from sticking to the tawa?

Use just enough ghee—about half a tablespoon—swirl it around the surface, then place the paratha. The tawa should be hot but not smoking; press lightly with a spatula to keep it flat.

02

Is it possible to use a different flour for these parathas?

The recipe is designed for whole‑wheat flour, which gives the parathas their characteristic fiber and chew. Switching to a lighter flour will change the texture and may make the dough harder to roll.

03

What’s the simplest way to prepare the white butter?

Whisk the unsalted butter with a fork until it becomes pale and airy, like a soft spread. Add a pinch of salt if you like, cover, and let it sit at room temperature until ready to serve.
